Flan aux oeufs

I love le flan aux oeufs. It reminds me my childhood, my grandma's kitchen. I don't know why I thought they were more complecated to prepare than they really are. No flour to be used so that's a perfect dessert for coeliac people. My daughter loved them.

Here you have the recipe to make 6 individual ones.


Ingredients
for the caramel
100g sugar
30g water

for the flan
1 litre of milk
1 vanilla pod
100g sugar
6 eggs

Preparation

Preheat the oven 180°.

Put in a pan the sugar and the water and heat until the caramel starts to get colour. Watch out to avoid burning it. Once it has a nice colour pour it in the individual rameking to cover the bottom.

In a different pan put the milk and the vanilla pod and heat until boiling.

In a bowl mix the eggs and the sugar. Add the boiled milk and stir together constantly.

Pour this mix into the ramekin. Fill a dish of water so that you can put the ramekin in it and cook them in the oven bain-marie. Let them for 25 min. in the oven.

Take the flan out of the oven and let them cool. You can keep them in the fridge.
